Steps in the Fudge Making Process

We use only the freshest ingredients available.

1. First we measure all the ingredients into copper kettles. We use an over/under scale to weigh each ingredient to the exact amount needed. We measure the dry ingredients first, then the wet ones.

2. We place the kettle on the gas cooker and mix the ingredients. We stir the mixture as it cooks. We cook the candy to just the right temperature. (This is the real secret to perfect candy every time.)

3. When the temperature reaches the right degree, we remove the kettle from the heat.

4. We take the cooked candy to the marble table and pour the candy out between stainless steel rods that have been placed on the table.

5. The candy cools. An expert eye can judge just when the candy is ready to be shaped into a loaf.

6. A stainless steel paddle is used to begin shaping the fudge. At first the candy is very thin. An expert makes this process look easy...but it takes real talent to keep the fudge on the table! It is at this time that nuts, peanut butter, and other add-ins are mixed into the candy. The fudge thickens as it is worked.

7. When the fudge gets to the consistency of thick icing, a fudge shaper is used to shape the final product into a long loaf.

8. The last step is cutting the fudge into ½ pound slices. These slices are put on trays ready to be sold.
